mediterranean avocado salmon salad with an incredible lemon dressing!
A twist on your favourite Mediterranean Salad, this Salmon Salad comes fully loaded with pan seared, tender-crisp salmon fillets, cucumber, olives, tomatoes, feta cheese and avocados drizzled in the best lemon herb mediterranean dressing!
INGREDIENTS
Marinade/Dressing:
3tablespoonsolive oil
2tablespoonslemon juicefresh squeezed
1tablespoonred wine vinegar(optional)
1tablespoonfresh chopped parsley
2teaspoonsgarlicminced
1teaspoondried oregano
1teaspoonsalt
cracked pepperto taste
1pound(500 g) skinless salmon fillets
Salad:
4cupsRomaine(or Cos) lettuce leaves, washed and dried
1large cucumberdiced
2Roma tomatoesdiced
1red onionsliced
1avocadosliced
1/2cupfeta cheesecrumbled
1/3cuppitted Kalamata olives(or black olives), sliced (optional)
Lemon wedgesto serve
INSTRUCTIONS
Whisk together all of the marinade/dressing ingredients in a large jug. Pour out half of the marinade into a large, shallow dish. Refrigerate the remaining marinade to use as the dressing later.
Coat the salmon with the marinade. Heat 1 tablespoon of oil in a skillet or grill pan over medium-high heat. Sear salmon on both sides until crispy and cooked to your liking.
While salmon is cooking, prepare all of the salad ingredients and mix in a large salad bowl.
Slice salmon and arrange over salad. Drizzle with the remaining UNTOUCHED dressing. Serve with lemon wedges.
